Coffee Lab

When you hear coffee lab what do you picture? I see a bunch of hipster baristas running around each with a different coffee maker in hand. Some have the chemex, french press, classic pot, slow drop pots, espresso. Just the works. Not the cafe in this newly opened Lincoln Park coffee shop BUT mighty close.

Coffee Lab is originally from Evanston, but has just recently opened a second smaller location in Lincoln Park! Very much looking forward to checking it out, just the month it has been open it has already received five stars on Yelp! Quite impressive for a new place. Lincoln Park could use more cute coffee shops too. Since we do our groceries up that way we decided to swing by in the morning to grab some coffee.

Upon pulling up you literally could drive right pass this cafe, it’s just past Diversey on Lincoln Ave. and if you are looking it’s like the second shop on your right! Entering the cafe we were greeted immediately by the most friendly barista ever1 He takes the prize, extremely smiley and helpful and looking to converse but only with those that have questions or are also looking for light conversation. So not overly pushy and extremely patient while we take in all the menu options. Oh I didn’t even mention but this cafe for being quite small was completely packed! All the tables were taken with groups hanging out or other working! Guess you need to come early if you want to secure a good seat.  

I was actually pleasantly surprised to see the coffee roaster in the back of the cafe, I assumed since this was the second cafe and much smaller than the Evonstan location that the roaster would not be here but the beans would be brought in. Nope! Roasted fresh daily here. While taking in the menu it was clear the cafe favorite was the Honey Butter latte, made fresh as there in house! Sold! (as we know I am a sucker for honey when I see it on a menu).  

Danny and I both ordered that with an extra shot of espresso!  While waiting for the coffee we stood along the front window and just casually took in the cafe vibes. One thing we both noticed and really appreciated was the care and training that was taking place behind the coffee counter. The lead barista was taking their time to make all the drinks and properly train the new staff. Ensuring everyone was making the drinks to hre best quality as possible! We both agreed this was a nice touch and we would both love to work in a cafe for a while like this so that could properly learn how to make drinks.  

Honey Butter lattes ready to go! We each took a sip before running out the door and the lattes were delicious. The perfect amount of steamed milk, the honey butter was extremely light, almost not noticeable but still added a sweet touch. The espresso, what we are all in it for was fabulous, I have never seen their beans sold anywhere but I would go back to get a few bags. The espresso flavor was strong and nutty!  

Has anyone been to the Evonstan location? Would love to know how that compares! Maybe in the summer I’ll take a drive up there to compare cafes! Till then I’ll be on the lookout for their coffee beans in store.
